Vegan Cheesecake 


What a wonderful dessert vegan cheesecake. I love it best with a bunch of fresh berries on top. This recipe is for a plain dairy free "cheese"cake.  This will be a great recipe for the holidays.  Hope you enjoy! And by the way it's so easy to make :)

Ingredients:

1 (12 ounce) package of soft tofu

1/2 cup vanilla soymilk

1/2 cup sugar in the raw

1 tbsp vanilla extract

1 tsp ground cinnamon

1/4 cup pure maple syrup

1 (9 inch) prepared vegan pie crust

2 cups fresh berries (garnish, optional)


Steps:

1. Preheat oven to 350 degrees F.

2. In a blender combine all ingredients (except pie crust & berries). Pour mixture into the pie crust.

3. Bake for 30 minutes. Remove from oven and allow to cool. Refrigerate before serving.

NOTE: Add any kind of fresh berries or fruit on top of your cheesecake when serving, so yummy.
