Apple Butter Pancakes 

Apple Butter Pancakes
Apple butter pancakes are sweet and rich yet makes the best hearty breakfast. Then add some orange or cherry jam. Oh my... Try these pancakes for breakfeast or brunch. Quick and easy to make.


Ingredients:

2 cups unbleached flour

2 tsp baking powder

2 cups vanilla soy milk

Egg substitute equal to two eggs

1 tbsp vegetable oil

1/2 cup chunky applesauce

1 tbsp cinnamon

1/2 cup vegan butter, softened

1/4 cup agave or honey

1/4 tsp cinnamon

real maple syrup

(optional) orange or cherry jam, garnish


Steps:

1. For flavored butter, in a small mixing bowl, use a small whisk to combine butter, honey, and cinnamon. Whisk until well combined; set aside.

2. In a large mixing bowl, combine flour and baking powder. In a small bowl, whisk soy milk, egg substitute, vegetable oil, applesauce and cinnamon. Add liquid ingredients to the dry ingredients and stir until just moistened. 

3. Using a nonstick pan, spoon about 1/8 cup of batter per pancake into the skillet. Cook over medium heat for about one minute or until top bubbles, flip and cook another minute.

4.  Serve hot with flavored butter and maple syrup. You can also add orange or cherry jam on top too. Enjoy!
